Day 1....Today
Today and forever on I'm embracing vegetarianism. I've been slowly gearing up to this for a full 12 months, slowly reducing the meat based meals and replacing them with vegetable matter as it's referred to around these parts.
So this is what was on offer for dinner tonight. Chachouka, a spicy pepper and tomato stew with eggs baked in the dish, all served up with a green salad. The recipe can be found here or in River Cottage Veg Everyday.....and it was delicious.

DeleteWelcome to the vegetarianism Vicki! This looks yummy! I have 3 of River Cottage books and use them almost every day:) Best of luck with your new lifestyle. We are now in the year 2 of being vegetarian and this year taking it to the next level by cutting down on dairy (mainly cheese). x
ReplyDeleteThanks Katia, I remember reading a few of your posts and blogs through 2012 about your progress with becoming a "Vegie!"....I did look at the whole dairy thing as well, but I'll give myself 12 months first before I look at the whole dairy thing as well....I'm off to make some black bean soup for lunch....If I get one thing out of this Katia, it's keeping me busy meal planning!
